Chicken Vermicelli Salad
- 500 g vermicelli
- 1 lb cooked boneless skinless chicken breast
- 1 large onion
- 1 large red pepper
- 1 large yellow pepper
- 1 large green pepper
- 1 (14 3/4 ounce) can sweet corn
- 2 cups chicken stock
- salt and pepper
- 4 tablespoons oil
- 2 tablespoons butter or 2 tablespoons ghee
- first off chop the chicken , onion and peppers into long thin strips
- heat a large pan and add oil and fry the onion until it;s golden brown.
- add the peppers and cook for about 15 minutes then add the chicken and sweet corn and cook for another 10 minutes.
- in another pan add the butter or ghee and fry the vermicelli till it's dark brown
- note: you have to stir it constantly and be careful because it could burn easily ,.
- cover the vermicelli with chicken stock and turn the heat down and let it cook for about 15 minutes or until it;s soft.
- combine everything together in a large bowl .
- you can serve it hot or cold .
