Chinese Noodles in Peanut Sesame Sauce
- 5 ounces chinese noodles
- 3 tablespoons peanut butter
- 1 12 tablespoons rice wine vinegar
- 12 teaspoon hot oil
- 3 12 tablespoons sesame oil
- 1 12 tablespoons soy sauce
- 2 teaspoons sugar
- 1 tablespoon hot water
- 2 scallions, minced
- Cook noodles in a large pot of boiling water, gently separating the strands with a long fork as they soften, until barely tender -- about 2 minutes.
- Drain and rinse under cold running water to stop the cooking.
- Drain well and dump into a bowl and toss with .5 tbs of th sesame oil to prevent sticing.
- In a small bowl, gradually stir the remaining oil into the peanut butter.
- Blend soy sauce, rice wine vinegar, sugar, hot oil and hot water.
- Spoon over noodles and toss to coat well.
- Add scallions and toss lightly.
