Baked Macaroni With Calamari Tomato Sauce Recipe

  1. In a medium-size saucepan, heat the extra virgin olive oil over medium-high heat.
  2. Add in the onions, bay leaves, 1/2 tsp.
  3. of the salt, the cayenne, and pepper flakes.
  4. Cook, stirring, for 3 min.
  5. Add in the tomatoes, tomato paste, garlic, wine, 1 c. of the water, the basil, parsley, and sugar.
  6. Stir to mix.
  7. Bring to a boil, reduce the heat to medium, and simmer till thick, for 45 min.
  8. Add in the calamari and simmer for 12 min.
  9. Preheat the oven to 350 degrees.
  10. In a large saucepan over high heat, combine the remaining 6 c. of water, 1/2 tsp.
  11. of the salt and the vegetable oil.
  12. Bring to a boil.
  13. Add in the macaroni and cook, stirring occasionally, till tender, about 8 min.
  14. Drain and rinse under cold water.
  15. Pour into a 2-qt baking dish.
  16. Pour the calamari sauce over the macaroni and stir to mix.
  17. Arrange the olives of the top of the macaroni.
  18. In a small mixing bowl, combine the bread crumbs with the remaining 1/2 tsp.
  19. salt, black pepper and extra-virgin extra virgin olive oil.
  20. Mix well and sprinkle over the olives.
  21. Bake till the bread crumbs are golden, about 30 min.
  22. Spoon onto serving plates and garnish with parsley.
  23. This recipe yields 8 servings.
