Couscous Salad
- 2 cups water
- 1 12 cups couscous
- 2 tablespoons oil
- 2 cups chickpeas, drained
- 1 zucchini, quartered and cut into small pieces
- 1 cucumber, peeled and cut into small pieces
- 12 cup chopped parsley
- 2 cups chopped spinach
- 13 cup lemon juice
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 5 teaspoons sugar
- 2 teaspoons garlic, finely minced
- 13 cup oil
- Boil water and first amount of oil, add couscous take off heat put lid on and let sit for about 5 minutes.
- Cool Transfer couscous to a large bowl, add chickpeas, zucchini, cucumber, parsley and spinach.
- In another bowl mix lemon juice, chili powder, salt, pepper, sugar, garlic and oil.
- Pour over salad and mix well.
- Refrigerate 2 hours before serving.
