Mini Cherry Souffles

  1. Dissolve gelatin in boiling water; stir in cold water and almond extract.
  2. Refrigerate until slightly thickened.
  3. Beat slightly thickened gelatin until light and fluffy.
  4. Fold in whipped topping.
  5. Spoon mixture into 4 (6-ounce) dishes which have been fitted with 1/2-inch foil collars.
  6. Refrigerate until firm, about 3 hours.
  7. To serve, remove foil; garnish with maraschino cherries and almonds.
