Ruby Ennis' Fruit Cake Recipe
- 1 pound pineapple green and yellow (1/2 pound each)
- 1 pound red cherries
- 1 pound coconut
- 3 lbs. nuts
- 4 c. sugar
- 4 c. self-rising flour
- 1 doz. Large eggs
- 1 pound butter
- 1/2 pound minced dates
- Cream butter and sugar.
- Add in Large eggs and flour.
- Mix all fruit together and toss well.
- Mix in batter.
- Bake in dish pan.
- Stir every 15 min.
- 350 degrees for 1 hour and 15 min.
- Pack in two medium sized tube cake pans.
- Place back in oven and turn oven down low.
- Let stay for about 15 to 20 min till cake is set.
- Excellent fruit cake.
