Vanilla Chip Layer Cake with Cherry Curd Filling

  1. Preheat oven to 350.
  2. Spray 3 - 8 inch baking pans with bakers spray
  3. In a bowl whisk flour, baking soda, baking powder and salt together, set aside
  4. In a large bowl beat sugar and butter until creamy about 2 minutes Add flour and milk and stir just until moist then add eggs and vanilla and beat just until combined, add mini chips and fold in
  5. Pour batter evenly into prepared pans.
  6. Bake 15 to 23 minutes until a toothpick comes out just clean
  7. Cool on racks 10 minutes then remove from pans and cool completely
  8. MAKE CHERRY WHIPPED CREAM
  9. Whip cream until soft peaks form, beat in cherry curd, recipe attached below, vanilla abd cherry extract and sugar, beat until firm peaks.
  10. Add drops of red food color if you want it pinker
  11. ASSEMBLE CAKE
  12. Put one layer of cake bottom up on serving plate
  13. Cover with a layer of cold cherry curd
  14. Place second cake layer, bottom side up
  15. Cover with more cherry curd
  16. Add third cake layer top side up
  17. Frost entire cake with Cherry Whipped Cream
  18. Garnish with fresh cherries, chocolate shavings and sprinkles.
  19. Chill cake at leat 1 to 2 hours before cutting to allow it to firm up
