Berry Chocolate Panini Sandwich with Wine Reduction Sauce

  1. In a small saucepan add the wine, sugar and vanilla extract and bring to boil.
  2. Reduce heat to a simmer and reduce mixture until about half of it remains.
  3. This should take about 25 to 30 minutes.
  4. Remove from heat.
  5. To make the sandwich: In a bowl add berries and slightly smash them with a fork.
  6. Add the berry mixture onto one slice of bread and drizzle with about 2 tablespoons of wine reduction.
  7. Top with chocolate, then add the brie cheese.
  8. Top with the other slice of bread.
  9. Place onto a panini maker and cook according to manufacturers instructions until cheese and chocolate is melted.
  10. Note: You will have wine reduction sauce left.
  11. Save it to add on top of more sandwiches, yogurt, ice cream or even a salad.
