Louisiana Red Beans and Rice

  1. Cook beans in water, (or use 4 cans cooked beans).
  2. Saute garlic & onion in baccon drippings until onions are transparent.
  3. Season with a little salt.
  4. Add celery, bell epper, parsley and simmer 5 - 10 minutes.
  5. Add beans, tomato sauce and bay leaf, bring to boil.
  6. Add sausage, sliced in 1" pieces and sugar.
  7. Simmer 20 minutes, or until sausage is heated completely.
  8. Serve over cooked rice.
