Scalloped Potatoes Florentine Recipe
- 10 ounce. can condensed cheddar cheese soup
- 16 ounce. can tomatoes, liquid removed and minced
- 10 ounce. pkg. frzn minced spinach, thawed
- 1/2 c. sliced onion
- 1 tbsp. minced fresh parsley
- 1/2 teaspoon lemon juice
- 1 clove garlic, chopped
- Dash of pepper
- 2 c. shredded Swiss cheese
- 4 c. thinly sliced potatoes
- In a mixing bowl, stir together all ingredients except 1/2 c. cheese and the potatoes.
- In a buttered casserole, layer sauce alternately with potatoes, beginning and ending with sauce.
- Cover, bake 1 hour and 10 min at 375 degrees.
- Uncover; sprinkle with reserved cheese.
- Bake an additional 15 min.
