Fruity Curry
- 6 chicken breasts
- 1 fresh pineapple
- 1 apple
- 1 onion
- 1 garlic clove
- 1 banana (yes a banana)
- 2 teaspoons of low fat coconut milk
- 3 fluid ounces chicken stock
- 2 tablespoons sultanas
- Method Heat oven to fan 180 C gas mark 4.
- Spray a baking tray with olive oil.
- Put the raw chicken breasts on it.
- Cover with tin foil and cook for 25 mins ( when i am using chicken for children, I always cook it first ,as I find it easier to chop into tiny baby bite size pieces.)

- Cook rice according to packet.
- Put a large saucepan on a medium heat and spray with olive oil.
- Roughly chop the onion, peel and core the apple,.
- peel and chop the pineapple and banana.
- and add the the saucepan.
- Add the low fat coconut milk and chicken stock and stir,, cook for 20 minutes.

- Finely add cooked chicken and sultanas after 25 mins.
