Herbed Red Potatoes Recipe
- 10 ounce. sm. red potatoes (about 6)
- 1 tbsp. extra virgin extra virgin olive oil
- 1/4 teaspoon grated lemon zest
- 1/4 teaspoon salt
- 1/4 teaspoon freshly grnd pepper
- 1 tbsp. chopped fresh mint
- 1 teaspoon chopped fresh parsley
- Heat oven to 350 degrees.
- Scrub potatoes; slice 1/4 inch thick.
- Combine potatoes with oil, lemon zest, salt, and pepper.
- Divide potatoes between 2 pcs of aluminum foil.
- Fold foil to make air- tight pkgs.. Bake till tender, about 20 min.
- Sprinkle potatoes with herbs and quickly toss.
- Serve warm.
- Serves 2 (195 calories per serving).
