Herbed Red Potatoes Recipe

  1. Heat oven to 350 degrees.
  2. Scrub potatoes; slice 1/4 inch thick.
  3. Combine potatoes with oil, lemon zest, salt, and pepper.
  4. Divide potatoes between 2 pcs of aluminum foil.
  5. Fold foil to make air- tight pkgs.. Bake till tender, about 20 min.
  6. Sprinkle potatoes with herbs and quickly toss.
  7. Serve warm.
  8. Serves 2 (195 calories per serving).
