Chicken Breasts With Grapes

  1. Preheat oven to 375u0b0.
  2. Remove skin from breasts and halve then coat the pieces with the crumbs mixed with salt, pepper and tarragon.
  3. Brown the chicken on all sides in 4 tablespoons of the butter in a skillet.
  4. Place the pieces in a single layer in a shallow baking pan.
  5. Add the onion to the butter left in the skillet and cook until tender.
  6. Pour in the stock and wine and bring to a boil.
  7. Pour around the chicken.
  8. Bake, uncovered, for 30 minutes.
  9. Saute the mushrooms in the remaining butter and add along with the grapes to the chicken.
  10. Bake for 8 to 10 minutes longer.
