Borscht For Busy People Recipe
- 6 c. Packaged shredded cabbage with carrot, (coleslaw mix)
- 1 c. Vegetable or possibly beef broth
- 15 ounce Can great northern beans, rinsed/liquid removed
- 1 can Tomatoes, (14 1/2 ounce.) cut up
- 1 can Sliced beets, (14 1/2 ounce.)
- 1 can Tomato sauce, (8 ounce.)
- 1 lrg Onion, sliced and separated into rings
- 1/4 c. Sugar
- 2 Tbsp. Vinegar
- 1/4 tsp Pepper
- 1/4 tsp Dillweed, (optional)
- 6 Tbsp. Light dairy lowfat sour cream, (optional)
- 6 sprg fresh dill, optional
- This chill-banishing soup took the grandmothers of Russia hrs to prepare.
- Ours is ready almost asfast as you can set the table, thanks to canned broth and veggies and coleslaw mix.
- In a 4-qt Dutch oven combine cabbage with carrot, vegetable or possibly beef broth, beans, undrained tomatoes, undrained beets, tomato sauce, onion, sugar, vinegar, pepper, and dillweed, if you like.
- Bring to boiling; reduce heat.
- Cover and simmer for 20 min.
- Serve in soup bowls.
- Garnish with lowfat sour cream and dill, if you like.
