Lori's Chicken Balls
- 14 cup honey
- 12 teaspoon lemon rind (grated)
- 2 tablespoons soy sauce
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 2 teaspoons canola oil
- 1 cup onion (minced)
- 1 cup green pepper (minced)
- 2 garlic cloves (minced)
- 1 12 lbs ground chicken
- 12 cup breadcrumbs
- 12 cup zucchini (shredded)
- 12 teaspoon salt
- 12 teaspoon lemon rind (grated)
- 14 teaspoon fresh cracked pepper
- 2 teaspoons Dijon mustard
- 2 teaspoons lemon juice
- 1 teaspoon soy sauce
- Heat oven 400.
- Whisk together the honey, rind, soy sauce, dijon and juice.
- Set aside.
- Heat oil in a skillet.
- Add onion, pepper and garlic.
- Saute 3 minutes.
- Add chicken.
- Saute 5 minutes.
- Remove from heat.
- Let cool.
- Stir in the breadcrumbs, zucchini, salt, rind, pepper, dijon, juice and soy sauce.
- Shape into 1/2 inch balls.
- Place on a sprayed baking sheet.
- Bake 20 minutes or until golden.
- Pour sauce over.
- Stir to coat.
- Bake 5-10 more minutes.
