Sweet Potato Pudding
- 3 large sweet potatoes, grated
- 2 medium-sized onions, grated or minced
- 1 green pepper, chopped fine
- 2 tablespoons melted bacon fat
- 1/4 teaspoon black pepper
- 1/8 teaspoon thyme
- 1/8 teaspoon marjoram
- 1/8 teaspoon sage
- Mix all ingredients thoroughly.
- Place in a greased casserole, cover and bake in a moderate (350F.)
- oven for 45 minutes or until potatoes are almost tender.
- Uncover and bake 15 minutes longer.
