Lisas Southern Fried Chicken
- 1 whole Grown Fryer Chicken, Cut Into Servings
- 2 teaspoons Kosher Salt
- 1 Tablespoon Thyme Or Tarragon, Minced
- 2 teaspoons Freshly Ground Black Pepper
- 1/2 cups All-purpose Flour
- 1 cup Buttermilk
- 2 whole Eggs
- 2- 1/2 cups Saltine Crackers- Crushed To Coarse Crumbs
- 4 cups Corn Or Peanut Oil For Frying
- Preheat oven to 375 degrees.
- Mix together the salt, minced herbs and pepper.
- Lightly beat the eggs and add to the buttermilk in a bowl.
- Season the chicken pieces with the seasoned salt blend.
- Dust with all-purpose flour.
- Dip the chicken pieces in the buttermilk egg mixture and coat with crushed saltines.
- Make sure the cracker crumbs adhere to the chicken.
- Heat oil to high (when a piece of cracker vigorously sizzles when dropped into the hot oil).
- Fry chicken pieces on both sides until golden brown.
- Pay attention as this happens quickly.
- Place fried chicken pieces on a baking sheet and bake for 40 to 45 minutes or until done.
- Can be served warm or at room temperature.
- We like it with served with broccolini thats been roasted with olive oil and garlic.
