Caramelized Onions

  1. In a 10-inch skillet or saute pan, heat the oil.
  2. Add the onion and cook Over medium heat, stirring frequently, until lightly browned, about 15 minutes.
  3. Add the vinegar and cook 1 minute longer.
  4. Season with salt and pepper to taste.
  5. Cool the onion and transfer to a covered container.
  6. Refrigerate and use as needed.
