Beef Tenderloin And Greens Dijon Recipe

  1. Make Dijon dressing: Whisk together extra virgin olive oil, mustard, vinegar, garlic, sugar substitute, basil and pepper in a medium bowl till creamy.
  2. Set aside.
  3. Cut beef tips into 1- by 1/2-inch pcs.
  4. Heat oil in a large nonstick skillet over medium-high heat till warm.
  5. Brown beef in two batches 2 to 3 min.
  6. Remove from skillet and season with salt and pepper.
  7. Toss salad greens with 1/2 c. dressing in a large bowl.
  8. Arrange greens on a platter; top with beef and croutons.
  9. Serve with remaining dressing on the side.
  10. This recipe yields 4 servings.
