Beef Tenderloin And Greens Dijon Recipe
- 1/2 c. extra virgin olive oil
- 1/4 c. Dijon mustard
- 1/4 c. balsamic vinegar
- 1 x garlic clove pressed
- 1/2 pkt sugar substitute
- 1/2 tsp dry basil
- 1/4 tsp freshly-grnd black pepper
- 1 1/2 lb beef tenderloin tips
- 1 Tbsp. extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp freshly-grnd black pepper
- 8 ounce mixed salad greens (8 to 10) Atkins Croutons for serving
- Make Dijon dressing: Whisk together extra virgin olive oil, mustard, vinegar, garlic, sugar substitute, basil and pepper in a medium bowl till creamy.
- Set aside.
- Cut beef tips into 1- by 1/2-inch pcs.
- Heat oil in a large nonstick skillet over medium-high heat till warm.
- Brown beef in two batches 2 to 3 min.
- Remove from skillet and season with salt and pepper.
- Toss salad greens with 1/2 c. dressing in a large bowl.
- Arrange greens on a platter; top with beef and croutons.
- Serve with remaining dressing on the side.
- This recipe yields 4 servings.
