Potato Soup
- 2 cups diced potatoes
- 34 cup celery
- 34 cup carrot
- 34 cup onion
- 2 garlic cloves
- 1 12 cups diced ham
- 2 tablespoons margarine
- 3 tablespoons flour
- 4 cups chicken broth
- 12 teaspoon salt
- 14 teaspoon pepper
- 1 34 teaspoons cajun seasoning
- 34 cup milk
- 1 cup cheddar cheese (for garnishing)
- Melt margarine in large saucepan.
- Add potatoes, celery, onion, carrots, garlic, and diced ham; saute for 15 minutes at medium high heat.
- Add flour.
- Cook for an additional minute, stirring constantly.
- Add the chicken broth.
- Reduce heat to medium, and allow to simmer for 30 minutes.
- Add pepper, salt, and Cajun seasoning.
- Allow to simmer 5 minutes.
- Add milk.
- Allow to cook for 2 minutes.
- Serve.
- Garnish with cheese.
