Brown Sugar Coconut Squares Recipe
- 1 1/2 c. All-purpose flour
- 1/2 c. Butter or possibly margarine softened
- 1/3 c. Brown sugar, packed
- 2 x Large eggs
- 1 1/2 c. Coconut
- 3/4 c. Brown sugar, packed
- 2 Tbsp. All-purpose flour
- 1/2 tsp Baking pwdr
- 1/2 tsp Vanilla extract
- 1/4 tsp Salt
- 1 c. Minced nuts
- 1 c. Powdered sugar sifted
- 1 Tbsp. Butter or possibly margarine melted
- 4 tsp Lemon juice approximately
- Preheat oven to 350 degrees.
- In a mixing bowl, beat together 1 1/2 c. flour, 1/2 c. butter and 1/3 c. brown sugar.
- Press into the bottom of an ungreased 13 x 9 x 2-inch baking pan.
- Bake for 10 min.
- In another bowl, beat the Large eggs.
- Stir in the coconut, 3/4 c. brown sugar, 2 Tbsp.
- flour, baking pwdr, vanilla extract and salt.
- Stir in the minced nuts.
- Spread over the baked mix.
- Bake for 20 min longer, or possibly till set.
- Meanwhile, combine the powdered sugar and melted butter.
- Add in sufficient lemon juice to make a glaze.
- Drizzle over the hot bars in the pan.
- Cut into squares.
