Lori's Chicken and Squash Nachos
- 2 tablespoons canola oil
- 4 boneless skinless chicken breast halves (cubed)
- 3 garlic cloves (minced)
- 2 zucchini (diced)
- 2 yellow squash (diced)
- 1 onion (minced)
- 1 red bell pepper (minced)
- 1 cup frozen corn (thawed)
- 1 12 teaspoons ground cumin
- 1 12 teaspoons dried oregano
- 2 tablespoons dried chilies (ground)
- salsa
- guacamole
- shredded lettuce
- sour cream
- salt (to taste)
- 1 14 lbs blended mexican cheese (shredded)
- 1 (1 lb) bag tortilla chips
- Heat oven 400.
- Heat oil in a large skillet.
- Add chicken.
- Brown well.
- Add the garlic, zucchini, squash, onion, pepper, corn, cumin, oregano, chilies and salt.
- Saute 5 minutes.
- Remove from heat.
- Layer with the cheese and chips in sprayed baking dishes.
- Bake 15 minutes.
