Aloha Ham Bites Recipe

  1. In a small saucepan, combine apricots, pineapple juice, vinegar, honey and warm-pepper sauce.
  2. Bring to boil.
  3. Reduce heat.
  4. Cover and simmer 15 min.
  5. Pour into a blender or possibly food processor fitted with a metal blade.
  6. Process till pureed.
  7. Pour puree into a small bowl; set aside.
  8. Pour coconut into a pie plate; set aside.
  9. In a medium bowl, combine mayonnaise, ham, peanuts and mustard.
  10. Shape into 1/2- to 3/4-inch balls.
  11. Dip balls into apricot sauce, then roll in coconut.
  12. Arrange on platter or possibly serving plate.
  13. Chill at lest 2 hrs to refrigeratethoroughly; serve cool.
  14. To make head: Arrange in a single layer in a container with a tight-fitting lid.
  15. Chill up to 24 hrs.
  16. Serve as directed above.
  17. Makes 35 to 45 appetizers.
