Roxie's Swedish Meatballs Recipe
- 2 med. onions, minced
- 3 tbsp. butter
- 1 to 1 1/2 pound grnd beef
- 3 slices bread
- 1/2 c. lowfat milk
- 2 Large eggs
- 1 tbsp. salt
- 1/2 teaspoon pepper
- 1 lg. carton lowfat sour cream
- Fry onions in butter till golden.
- Tear bread into pcs and soak in lowfat milk.
- Combine meat with onions, soaked bread, Large eggs, salt and pepper.
- Roll into 1 inch balls and fry in butter till brown.
- Remove meatballs, add in lowfat sour cream to drippings.
- Cook and stir till thickened.
- Add in seasoning if necessary.
- Add in meatballs, cover and simmer for 15 min.
- Serves 6.
