Blue Ribbon Chicken Spiedies Recipe
- 3 1/2 lb Boneless skinless chicken breast halves, cut into chunks
- 2 c. Extra virgin olive oil
- 5 Tbsp. Balsamic vinegar
- 2 Tbsp. Light beer
- 2 Tbsp. Romano cheese, grated
- 2 Tbsp. Parsley
- 2 tsp Salt
- 1 tsp Garlic pwdr
- 1 tsp Onion, chopped
- 1 tsp Oregano
- Combine all marinade ingredients.
- Add in chicken and marinate at least 24 hrs (preferably 48) Turn chicken occasionally.
- Skewer and grill.
- Serve on Italian bread.
