Pineapple Lemon Mint Dressing Recipe

• 3/4 c. vegetable or possibly salad oil
• 1/4 c. unsweetened pineapple juice
• 1 teaspoon lemon peel
• 2 tbsp. lemon juice
• 1 teaspoon dry mint, crumbled
• 3/4 teaspoon salt
• 1/2 teaspoon dry mustard

1. Combine vegetable oil, pineapple juice, lemon peel, lemon juice, mint, salt, and dry mustard in a large screw-top jar.
2. Cover; shake thoroughly.
3. Chill till ready to use.
