Mussels in Rich Tomato Broth
- 2 teaspoons vegetable oil
- 2 Spanish onions, chopped
- 2 garlic cloves, crushed
- 1 pinch saffron threads soaked in 1 tblsp hot water
- 1 kg mussels, scrubbed, beards removed
- 2 cups tomato juice
- 1 cup dry white wine
- 2 tablespoons brown sugar
- 2 teaspoons finely grated lemon rind
- 3 tablespoons basil, chopped
- Heat oil in wok over medium heat.
- Add onions and garlic, stir fry for 3 minutes or till onions are golden.
- Add saffron mixture and stirfry for 2 minutes more.
- Add mussels, juice, wine, sugar, lemon rind.
- Bring to boil, reduce heat, simmer 10 minutes.
- Discard any unopened mussels.
- Stir in basil and serve.
