Honey Jalapeno Chicken with Sesame Soba

  1. Start a pot of water on the stove for the noodles.
  2. In a food processor, combine jalapeno, honey, cilantro, and salt and pepper.
  3. Puree until smooth, adding up to 3 tablespoons of water until a nice sauce forms.
  4. I usually add about 1.5 tablespoons of water.
  5. Add olive oil into a preheated skillet (over medium heat).
  6. Add the pulled chicken and the cilantro sauce.
  7. Toss and cook until heated through, about 5-10 minutes.
  8. In a large bowl, combine soy sauce, toasted sesame oil and scallions.
  9. Cook the soba noodles according to package directions.
  10. Drain and toss them in the large bowl with soy sauce mixture until well coated.
  11. Pour heated chicken and sauce over noodles.
  12. Garnish with chopped red pepper, slices of jalapeno and sesame seeds.
