Lemony Flank Steak
- 1 12 lbs flank steaks
- 1 teaspoon lemon zest
- 12 cup lemon juice
- 2 tablespoons sugar
- 2 tablespoons soy sauce
- 2 teaspoons fresh oregano
- 18 teaspoon black pepper
- Place meat in plastic bag.
- For marinade, combine remaining ingredients and add to bag.
- Let stand in the refrigerator 2-24 hours.
- Drain meat, reserving marinade.
- Preheat broiler.
- Place meat on broiler pan.
- Broil for 15-18 minutes, turning and brushing with the marinade half way through cooking.
- Thinly slice on the diagonal before serving.
