Kathy Pitts' Spinach

  1. My favorite thing to do with spinach is to wash it very well; but NOT drain it.
  2. Meanwhile, heat olive oil in a skillet and toss in a clove or two of chopped garlic.
  3. Heat the olive oil until the garlic is fragrant.
  4. Toss in the spinach along with whatever water clings to the leaves.
  5. Cover the pot; and shake well.
  6. Continue cooking/shaking until the spinach is JUST wilted.
  7. Add salt and pepper.
  8. Serve.
