Kathy Pitts' Spinach
- 1 lb. raw spinach
- 1 to 2 clove garlic, chopped
- 2 tbsp. olive oil
- Salt and pepper, to taste
- My favorite thing to do with spinach is to wash it very well; but NOT drain it.
- Meanwhile, heat olive oil in a skillet and toss in a clove or two of chopped garlic.
- Heat the olive oil until the garlic is fragrant.
- Toss in the spinach along with whatever water clings to the leaves.
- Cover the pot; and shake well.
- Continue cooking/shaking until the spinach is JUST wilted.
- Add salt and pepper.
- Serve.
