Apricot Sauce

  1. Put the apricot puree and water in a small saucepan and bring to a simmer over medium heat.
  2. Reduce the heat to low and simmer gently, stirring often with a heatproof rubber scraper, until reduced by half.
  3. Dont let this scorch.
  4. Cover with plastic wrap and chill for at least 2 hours before serving.
