Chicken Mexican (Main Dish) Recipe
- 1 tbsp. butter
- 1 med. onion, c hopped
- 1 sm. green pepper, minced
- 1 pound can tomatoes, minced
- 1 c. chicken broth
- 1 tbsp. cornstarch
- 2 sm. cans mushrooms
- Prepared rice for approximately six servings
- 1/2 teaspoon oregano
- 2 tbsp. parsley
- 1 tbsp. sugar
- 1/2 teaspoon black pepper
- 1 teaspoon chili pwdr
- 1 teaspoon garlic salt
- 2 c. cooked chicken, minced
- Saute/fry onion and green pepper in butter.
- Add in all remaining ingredients except chicken.
- Simmer till thickened.
- Add in chicken and continue to simmer 15 to 20 min.
- Serve over rice.
