Tangy Pork Curry with Coconut Rice

  1. Trim pork of fat and sinew and cut into 3cm cubes.
  2. In a large bowl mix lemon juice, rind, sugar and soy sauce.
  3. Add pork and mix well.
  4. Heat oil in a large pan.
  5. Add garlic, ginger, lemon grass and onion.
  6. Cook over med heat until onion is soft.
  7. Add cinnamon, turmeric, cumin, mustard seed and curry powder.
  8. Stir, cook for 1 to 2 mins.
  9. Add pork in batches until browned.
  10. Gradually add stock, mix well.
  11. Bring to the boil, reduce heat and simmer for around 50/55 minutes until pork in tender and sauce has thickened.
  12. Serve on a bed of steamed veggies with some coconut rice on the side.
  13. Coconut Rice: Heat oil in a large pan.
  14. Add rice and stir over heat until rice is coated.
  15. Add water and cream.
  16. Simmer gently, low heat, for 15 mins with the lid on.
  17. Remove from heat and leave covered for 5 minutes.
  18. This will finish the cooking of the rice.
  19. Fluff with a fork and serve.
  20. This dish packs a punch- very tasty, easy to make and worth giving a go.
