Heart Attack Chicken
- 2 large chicken breasts
- 500 grams streaky bacon
- 1 fresh sage leaves
- 250 grams mozzarella cheese
- 1 olive oil, extra virgin
- 500 grams green beans
- 6 ripe truss tomatoes
- dash soy sauce
- dash white wine
- tbsp crushed garlic
- Butterfly the chicken breasts
- Roughly chop a handful of sage
- Grate mozzarella
- Combine sage, mozzarella, olive oil, salt, and pepper to make a stuffing
- Stuff chicken breasts with mozzarella mix
- Wrap each breast in bacon so strips overlap
- Bake for 20mins at 200F (C), or until liquid runs clear
- Finish under grill for 5 mins
- Make a side dish!
- Bake tomatoes and beans in a casserole dish with sea salt, crushed garlic, pepper, and a dash each of soy, wine and olive oil.
- Slice the bacon-wrapped breasts at table and serve family-style
