Beef and Mushroom Stew with Marsala
- 2 pounds Stew Beef
- 1 Tablespoon Olive Oil
- 2 Tablespoons Butter
- 1 pound White Mushrooms, Halved
- 2 whole Onions, Minced
- 2 whole Garlic Cloves, Minced
- 1- 1/2 cup Marsala
- 1- 1/2 cup Chicken Broth
- 3 sprigs Fresh Thyme
- 1 cup Barley (optional)
- 1.
- Brown beef in butter and oil mixture.
- Reserve in crock pot.
- Add salt and pepper to taste.
- 2.
- In the same frying pan, brown mushrooms and onions.
- Add salt and oil, if needed.
- Add minced garlic and continue cooking for 1 minute.
- 3.
- Deglaze with marsala.
- Add chicken stock and thyme.
- 4.
- Bring to a boil and pour in crock pot.
- 5.
- Cover and cook for 4 to 5 hours on LOW setting.
- 6.
- After 4 hours of cooking, you can add 1 cup barley and continue cooking for 1 hour and 15 minutes more.
