Ginger-Orange Carrots

  1. Place carrots in a large skillet, cover with water and bring to a boil.
  2. Reduce heat, cover and simmer until crisp-tender, about 3 minutes.
  3. Pour off water leaving carrots in pan.
  4. Add remaining ingredients and stir over medium-high heat until carrots are glazed, 1 to 2 minutes.
