Down Home Vegetarian / Vegan Split Pea Soup
- 1 large onion, diced
- 6 carrots, sliced
- 4 celery ribs, sliced
- 2 cups frozen corn
- 4 teaspoons better than bouillon, no chicken flavor
- 8 cups water
- 1 lb split peas, rinsed
- 12 teaspoon smoked paprika
- 14 teaspoon black pepper
- Saute onion in one short spray of cooking spray until just starts to soften.
- Add remaining ingredients except paprika and pepper, bring to a boil.
- Reduce heat to low and simmer covered for one hour or until vegetables are soft.
- When finished, add smoked paprika and black pepper to taste.
