Soba Dipping Sauce Concentrate
- 200 ml Soy sauce
- 200 ml Mirin
- 100 ml Sake
- 2 tbsp Sugar
- 20 grams Bonito flakes
- 5 cm Kombu
- The day before preparing your sauce, place all of the ingredients into a pot and rest in the refrigerator.
- Heat Step 1.
- When it comes to a boil, turn down the heat to low and simmer for 5-6 minutes.
- After it has cooled, strain through a paper towel.
- Please store it in the refrigerator.
- Dilute with water before serving
- Chilled Soba Dashi Soy Sauce.
- Diluted Soumen Noodle Sauce.
