Boysenberry Peach Muffins Recipe

  1. Preheat oven to 400 F. In a small bowl, mix together the peaches and cinnamon.
  2. Set aside.
  3. In a large bowl, combine the flour, both sugars, baking pwdr, and salt.
  4. In a separate bowl, whisk together the egg, lowfat milk, and butter and stir in the reserved peach mix.
  5. Mix the egg/peach mix into the flour mix till just moistened.
  6. (Don't over-mix.)
  7. Gently mix in the Boysenberries.
  8. Fill greased muffin c. 3/4 full and bake for 20 to 25 min or possibly till golden.
  9. Let cold on a wire rack.
  10. Serve.
  11. YIELD: 12 MUFFINS
