Boysenberry Peach Muffins Recipe
- 1 c. fresh peaches, diced
- 1/2 tsp grnd cinnamon
- 2 c. all-purpose flour
- 1/4 c. granulated sugar
- 1/4 c. brown sugar, packed
- 2 1/2 tsp baking pwdr
- 1/2 tsp salt
- 1 x egg, beaten
- 1 c. lowfat milk
- 1/3 c. butter, melted
- 1 c. fresh Boysenberries
- Preheat oven to 400 F. In a small bowl, mix together the peaches and cinnamon.
- Set aside.
- In a large bowl, combine the flour, both sugars, baking pwdr, and salt.
- In a separate bowl, whisk together the egg, lowfat milk, and butter and stir in the reserved peach mix.
- Mix the egg/peach mix into the flour mix till just moistened.
- (Don't over-mix.)
- Gently mix in the Boysenberries.
- Fill greased muffin c. 3/4 full and bake for 20 to 25 min or possibly till golden.
- Let cold on a wire rack.
- Serve.
- YIELD: 12 MUFFINS
