Stir-Fried Chicken with Mango

  1. Trim the fat from the chicken and cut the chicken into 2 x 1/2-inch strips.
  2. In a medium bowl, mix together the salt, white pepper, ginger, and egg white.
  3. Add the chicken, toss, cover, and refrigerate for 20 minutes.
  4. In a small bowl, combine the white wine, garlic, ketchup, red pepper sauce, sugar, and soy sauce.
  5. Set aside.
  6. Peel the mango and cut into 2 x 1/2-inch strips.
  7. Place the mango strips in a bowl of hot water for 10 minutes; drain.
  8. Core and seed the green pepper and cut into 2 x 1/2-inch strips.
  9. In a small bowl, mix the flour and cornstarch together.
  10. Toss with the marinated chicken to coat and set aside.
  11. Heat a nonstick skillet over medium heat.
  12. Add the vegetable oil and chicken pieces.
  13. Stir and separate the chicken pieces.
  14. Cook for 2 minutes.
  15. Add the sauce mixture and green pepper and stir well.
  16. Cook for 1 minute and add the mango.
  17. Cook and stir until well mixed, about 30 seconds.
  18. Remove to a heated serving platter.
