Quiche with Frozen Puff Pastry

  1. Prep: Cut the ingredients for the filling into bite-size pieces.
  2. Blanch the spinach and potato (you could use a microwave oven).
  3. Bring the frozen pastry to room temperature.
  4. In a bowl, combine eggs, milk, pizza cheese, salt and pepper.
  5. When the blanched vegetables have cooled enough, add to the bowl.
  6. Saute the sausages and onions in a pan and cool to room temperature.
  7. Add to the bowl (Step 2) and combine well.
  8. Roll out the puff pastry.
  9. Line the crusts side by side on a tart pan and press into the bottom and the sides.
  10. Poke holes with a fork and pour in the filling mixture and top with cherry tomatoes.
  11. Bake in a 390F/200C oven for about 25 minutes and it's done.
  12. Enjoy your piping-hot, just-baked quiche!
