Lamb, Pumpkin and Zucchini Gratin
- 800g pumpkin, peeled and thinly sliced (5mm thickness)
- 2 large (500g) zucchini, thinly sliced lengthways (5mm thickness)
- olive oil spray
- 2 teaspoons olive oil
- 1 onion, finely chopped King Sooper's 1 lb For $0.99 thru 02/09
- 500g lean lamb mince
- 700g jar tomato pasta sauce
- 4 KRAFT Singles, cut in half diagonally
- 1/4 cup fresh breadcrumbs
- 1/4 cup Italian parsley, roughly chopped
- salad, to serve
- Arrange the pumpkin and zucchini on lined baking trays in a single layer then spray with oil.
- Bake at 200C for 10 minutes, then turn and cook a further 5 minutes until tender.
- Remove.
- Heat oil in a large frying pan and saute onion.
- Add lamb and cook until well browned.
- Stir in pasta sauce and heat through.
- Arrange half the pumpkin and zucchini in the base of a greased 2 litre shallow baking dish.
- Spoon over the lamb mixture, then layer with remaining pumpkin and zucchini.
- Top with Singles* then sprinkle with combined breadcrumbs and parsley.
- Spray with oil then bake at 200C for 20-25 minutes.
- Serve with salad.
