Lamb, Pumpkin and Zucchini Gratin

  1. Arrange the pumpkin and zucchini on lined baking trays in a single layer then spray with oil.
  2. Bake at 200C for 10 minutes, then turn and cook a further 5 minutes until tender.
  3. Remove.
  4. Heat oil in a large frying pan and saute onion.
  5. Add lamb and cook until well browned.
  6. Stir in pasta sauce and heat through.
  7. Arrange half the pumpkin and zucchini in the base of a greased 2 litre shallow baking dish.
  8. Spoon over the lamb mixture, then layer with remaining pumpkin and zucchini.
  9. Top with Singles* then sprinkle with combined breadcrumbs and parsley.
  10. Spray with oil then bake at 200C for 20-25 minutes.
  11. Serve with salad.
