Gingerly's Own Corned Beef and Cabbage
- 1 small onion, diced
- 4 small carrots, chunked
- 4 medium potatoes, peeled and chunked
- 1 lb corned beef brisket, trimmed
- 13 cup unsweetened apple juice
- 1 head cabbage, smalle head, chopped
- 2 whole cloves
- 15 -20 black peppercorns
- 2 cups water
- 1 tablespoon brown sugar
- 1 cup vegetable stock or 1 cup chicken stock
- 1 teaspoon prepared mustard
- 1 orange, zest of, large
- Add everything in a large stockpot and boil 3-5 hours or until tender.
