Ginger-Orange Pork Stir-fry
- 1 pork tenderloin thinly sliced (about 12 ounces)
- 2 tbsp ground ginger
- 1 cup chicken broth
- 2 tbsp teriyaki sauce
- 3 tsp cornstarch
- 2 tbsp brown sugar
- 2 tsp canola oil
- 8 oz snow peas (strings removed)
- 1 cup sliced sweet red peppers (I used a mixture of red, yellow and orange)
- 3 green onion sliced thin
- 2 tbsp orange marmalade
- In a bowl mix ginger, chicken broth, teriyaki sauce, cornstarch and brown sugar.
- Set aside.
- Salt and pepper tenderloin slices.
- Set aside.
- In a large skillet heat 1tsp oil over medium-high heat until hot.
- Add snow peas and peppers, cook while stirring for 1 minute.
- Add green onion slices and cook for another minute.
- Veggies should be crisp.
- ** (Be sure and slice green onions lengthwise like shown in first pic)**
- Remove veggies and set aside.
- In same skillet, heat remaining teaspoon of oil then add pork slices.
- Cook until pork just loses its pink (2-3 min) then remove pork from pan and set aside.
- (Pork will cook fast because of how thin it is sliced, don't overcook)
- Now pour your sauce mixture in skillet.
- Cook and stir constantly until bubbly.
- Continue to cook and stir until sauce slightly thickens, about 1 minute.
- Stir in marmalade.
- Taste your sauce, add more marmalade if you prefer a sweeter sauce.
- Return pork and veggies to sauce.
- Stir and coat with sauce.
- Heat through.
- Serve immediately.
