Roast Pork and Spiced Apples

  1. Preheat oven to 325F (160C).
  2. Rub the seasonings into the roast.
  3. Place on a rack set in the center of a roasting pan, fat side up.
  4. Pour enough water in the bottom to prevent burning, about 1/2 inch.
  5. Cook until the roast tests done (170 degrees F on a thermometer), about 2 1/2 hours.
  6. Meanwhile make the sauce and apples.
  7. For the Honey Sauce and Apples:
  8. In a medium saucepan combine all, except the apples.
  9. Stir well and bring to a boil.
  10. Add the apples slices, cover and simmer until apples are tender.
  11. Spoon over pork slices when served.
  12. Tip: I double the the recipe for the spiced apples because everyone just can't seem to get enough of them.
