Meat Loaf With Stewed Tomatoes Recipe

  1. Mix first 7 ingredients till blended.
  2. Bake at 350 degrees till browned.
  3. Carefully remove from pan without breaking.
  4. Drain drippings reserving 2 Tbsp.. Place on burner.
  5. Add in minced onion and pepper; cook till limp but not browned.
  6. Stir in 2 Tbsp.
  7. flour, then the cans of stewed tomatoes.
  8. Cook several min till thickened.
  9. If not thick sufficient, mix 1 Tbsp.
  10. cornstarch with some cool water and stir into tomatoes.
  11. Slice meat loaf and serve with stewed tomatoes over it.
