Awesome Crock Pot Roast
- 3 lbs chuck roast
- 3 cups sliced carrots
- 4 cups potatoes, peeled
- 2 medium onions, quartered
- 2 cups beef broth
- 1 cup red wine
- 12 teaspoon salt
- 12 teaspoon ground pepper
- 2 tablespoons minced garlic
- 2 tablespoons olive oil
- Heat the Olive Oil in a skillet and brown the chuck roast on both sides.
- Cut up the potatos into bite size pieces.
- Cut up the carrots into bite size pieces.
- Peel and quarter the onions.
- Place all the vegetables in the bottom of the crock pot.
- Add the beef stock and wine.
- Place the browned roast on top and smear the garlic on top of the roast.
- Cook on low for 8 to 10 hours or until roast is fork tender.
