Green Tomato Pickles - Green Tomato Relish

  1. Mix the tomatoes with the salt, cover and let stand overnight or for 24 hours.
  2. Wash in cold water and drain.
  3. Mix the remaining ingredients in a pot, add the tomatoes, and bring to a boil.
  4. Cook gently for about 15 minutes.
  5. Spoon into hot, sterilized jars, leaving 1/8 in.
  6. headspace, and seal.
  7. If you wish, process in a boiling-water bath for 10 min.
