Herbed & Crumbed Lamb Racks or Cutlets
- 12 cup honey mustard and herb marinade
- 12 cup breadcrumbs
- 2 lamb racks, each with 4 chops or 8 lamb cutlets
- Preheat oven to 200.C.
- Combine marinade with breadcrumbs and mix well.
- Press mixture evenly onto lamb racks and roast lamb racks for 30-45 mins depending on cooking preference.
- Rest for 10 mins before serving.
