Mixed Fruit Salad with Raspberry Vinaigrette
- 1 large Fuji or Granny Smith apple, thinly sliced
- 8 ounces strawberries, stemmed and thinly sliced
- 3 small plums, thinly sliced
- 2 tablespoons dried sweetened cherries or other dried fruit
- 1 1/2 to 2 tablespoons fat-free or light raspberry vinaigrette
- In a medium bowl, toss together all the ingredients.
- In addition to varying the dried fruit, you can make flavor changes by substituting fruit nectar, such as apricot, or fat-free mango salad dressing for the raspberry vinaigrette.
